Raw Marinated Mushrooms

Begin with a large packet of mushrooms sliced. Chefs will tell you not to get mushrooms wet, but I know how they grow them, so I rinse them well.
 
Place all the following in the food processor with the sharp S blade and blend.  Add the mushrooms and let soak in the refrigerator at least 12 hours.  Longer is better!
 
1 Red Pepper, diced
1 Big Tight Handful Fresh Basil, chopped
3 cloves Garlic, minced or pressed
2 T Olive Oil
½ T Salt or to taste
½ Lemon, juiced
½ T Apple Cider Vinegar, un-pasturized
 
Mushrooms are very healthy.  These make a wonderful side dish or addition to a salad.  Enjoy
