Marinara Sauce and "Meatballs"

This is one of my favorite meals, Spaghetti with Marinara Sauce and Meatless Balls. It is completely raw and vegan. Since it is served cold, it is wonderful on hot summer nights for dinner. This comes from the recipe book, Raw Foods Made Easy by Jennifer Cornbleet. I love this book! 1 ripe tomato, chopped
½ cup sun dried tomatoes oil packed
½ red bell pepper chopped
2 T extra virgin olive oil
1 T minced basil or 1 t dried
1 t dried oregano
1 clove crushed garlic
¼ + 1/8 t salt
Dash black pepper
Place everything in the food processor and blend till smooth-ish. Now peel a zucchini, using the peeler, make ribbons of thinly sliced zucchini until you get to the middle seeds. This will serve as your pasta. Since pasta has a bland flavor, this really tastes like pasta!
Serve on noodle cut zucchini with Walnut pate shaped into meatless balls
1 c soaked raw walnuts (soak in water 4-6 hours)
1T fresh lemon juice
1 t extra virgin olive oil
1 t tamari (soy sauce will do)
¼ t garlic powder
1 T minced fresh parsley
1 T minced onion
Grind everything except the parsley and onion until smooth then mix in the parsley and onion. Add about 2 T of the Marinara Sauce to the Walnut Pate to change the color a bit to look more like meat. Make into meatless balls.
