Gluten Free Flour recipe:
6 cups of rice flour
2 cups of potato starch
1 cup of tapioca flour
 
Muffin Recipe:
2 cups of Gluten Free Flour
1 tsp sea salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
¼ tsp allspice
½  tsp nutmeg
¼ tsp cloves
1 egg (optional, but we use them)
½ cup honey (we use palmetto honey due to its kind ways with blood sugar)
¼ apple sauce
¼ cup oil (we use grape seed oil)
1 cup apple juice
1 cup of chopped fruit and/or nuts (carob or chocolate are also options!)
 
Make flour mixture.  Preheat oven to 400 degrees.  Measure flour, salt, baking powder, baking soda, cinnamon, allspice, nutmeg, cloves and dry mix.  Play with spices depending on the type of fruit you are using.  Mix all ingredients except the apple juice and fruit.  Gradually blend in the juice be sure to scrape the bottom of the bowl.  Add fruit.  Place into paper lined muffin tins.  Bake for 20 minutes.Be sure to test with a toothpick.  If you used frozen fruits the baking time is more.   Mixture is very liquid compared to a gluten muffin mix.
